Christina’s Chicken Parmigiana

- 4 skinless chicken cutlet breasts thinly sliced
- 2 eggs
- 2 cups bread crumbs
- 1/4 cup parmesan cheese
- 2 cups marinara sauce
- 4 slices fresh mozzarella sliced
- 2 tablespoon parsley chopped
- salt and pepper

- Preheat oven to broil. If the chicken cutlets are not very thin, place them between parchment paper or in a freezer bag (one at a time) and pound with a meat mallet until thin, about 1/4 inch thickness. Season the chicken with salt and pepper.
- To prepare the breading mixture, beat the eggs in a shallow dish. In another shallow dish, combine the breadcrumbs and parmesan cheese. One at a time, place a piece of chicken in the egg mixture and then into the breadcrumbs. Pat them so they are all covered in breadcrumbs and place on a baking sheet. Repeat for each piece of chicken.
- Using cooking spray (I use olive oil spray), generously spray each piece of chicken. turn them and repeat spraying on the other side. Place in the broiler for 2-3 minutes on each side. Note: don't walk away! they will cook pretty quickly.
- Adjust the oven temperature to 375. In a baking dish, place 1/2 cup of sauce on the bottom and arrange the chicken in the dish. Using a spoon, distribute sauce (about 2 tablespoons per piece) on top of each piece of chicken and then a slice of mozzarella on each. sprinkle with parsley and bake for about 20 minutes, until the cheese is melted. Serve with your favorite pasta, loaf of bread or a vegetable.
